Instructions
Step 1
Preheat oven to 425 degrees F and prepare cookie sheet with aluminum foil.
Step 2
Melt butter in microwave. Stir in panko, cheddar, half the fry seasoning, salt, and pepper.
Step 3
Pat chicken dry with paper towel and season with remaining fry seasoning, salt, and pepper.
Step 4
Place chicken on prepared cookie sheet.
Step 5
Spread a thin layer of mayo on top of the chicken breasts and pack on the panko mixture (press down to adhere).
Step 6
Roast until cooked through (~20 minutes), and broil for the last 1-2 minutes for a nice golden crust.
Step 7
Slice chicken breasts into 2-3 strips each.
