Ingredients

2 cupsall-purpose flour
1 teaspoonbaking powder
½ teaspoonkosher salt
¼ teaspoonbaking soda
¼ teaspoonfreshly ground black pepper
8 tablespoonssalted butter
cut into pats and chilled
1 cupCheddar cheese blend
bagged, grated, mixed
¼ cupfresh flat-leaf parsley
finely chopped
¼ cupmixed fresh herbs
finely chopped, such as chives, thyme leaves, dill, and/or green onion tops
⅓ cupheavy cream

Instructions
Step 1
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Step 2
In a large bowl, whisk together the flour, baking powder, salt, baking soda, and pepper.

3. Scatter the butter pats over the flour mixture, toss to coat, and work in with your fingers until the mixture is crumbly.

4. Stir in the Cheddar, parsley, and mixed herbs.

5. In a small bowl, whisk together the cream and eggs. Pour into the flour mixture and stir with a fork to form large clumps of dough.
Step 6
6. Pour onto a work surface, gather, and knead gently to form a cohesive ball of dough. Flatten to an 8-inch round that is about ½ inch thick.

7. Use a sharp knife or pizza cutter to cut the dough into 8 equal wedges. Place on the prepared baking sheet, spacing them at least 1 inch apart.

8. Bake until golden brown, 20 to 25 minutes. Transfer to a wire rack to cool for at least 5 minutes, then serve warm or at room temperature.

9. Scones are best the day they are made. Store leftovers in an airtight container at room temperature for up to 3 days.
