Step 1
cut your chicken into small bite size pieces
boneless skinless chicken breast1.5 lbs

Season your chicken with the qdoba seasoning
adobo seasoning1 tsp

Spray a deep skillet or dutch oven with cooking spray and a drizzle of oil. Cook over medium high heat. Add chicken when the pan is hot. Cook for a few minutes and then flip the pieces and cook for another minute or so until cooked all the way through.
Step 4
Once the chicken is done, add in your uncooked rice to the skillet

Add in 2½ cups water and a crushed up tomato bouillon to the skillet.
Step 6
Stir the mixture and bring it to a boil for a minute or 2 minutes. Reduce to a simmer and cover for about 20 minutes.
Step 7
Check rice for doneness after at least 20 minutes.
Step 8
Once the rice is done, add in queso and milk. Then using a fork, stir the mixture until it is fluffy.
Step 9
Serve this warm meal and enjoy! :)
