Arepas with Carne Mechada and fresh Guasacaca

Instructions

Step 1
Begin with making the Carne Mechada. Season the steak generously with salt and pepper. In a hot pan sear on both sides to form a nice crust. In a sauce pan add 1 onion (quartered), 4 cloves of garlic, the steak and 6 cups of beef broth. Throw in 2 bay leaves and put onto boil. Once boiling, turning down to a simmer and place a lid on. Leave for 3 hours.
Step 2
Now for the Guasacaca, simply add all of the listed ingredients to a food processor and blend until smooth.
Step 3
Once the steak has simmered for 3 hours, removed from the broth but make sure to only discard the vegetables. You need the broth later on.
Step 4
Using two forks, shred the beef.
Step 5
Then dice the remaining onion, garlic and green pepper.
Step 6
Get a pan on a medium high heat and a tbsp of olive oil. Add the onions and sauté for a couple of minutes. Then add the peppers and garlic, sauté for a further 1-2 minutes and then add the steak. Mix well and add the oregano, Worcestershire sauce, pasata and the left over beef broth (2 cups). Leave to simmer on low whilst you prepare the Arepas.
Step 7
In a mix bowl, add the water and salt. Stir well and then add the cornmeal. Using your hands mix together well for 2-3 minutes until smooth. Then cover and leave for 10 minutes.
Step 8
Then shape into even size patties about 1/2 inch thick.
Step 9
Pre heat the oven to 180c/350f.
Step 10
In a pan on a medium low heat, add 1/2 tbsp of oil (canola, sunflower etc). Once it comes up to temperature, carefully place the Arepas into the pan.
Step 11
Fry for 4-5 minutes until golden brown and then flip and repeat for the other side.
Step 12
Place on a wire rack and bake in the oven for 15 minutes.

Remove and let them cool.
Step 14
Slice open, add the Carne Mechada and top with Mozzarella cheese. Place back in the oven for 5 minutes or until the cheese has melted.
Step 15
Serve with the Guasacaca on the side and enjoy!
