Ingredients
8 servings
2 tablspavocado oil
1red onion
diced
5garlic cloves
mined
1red capsicum
diced
1green capsicum
diced
3 cupssweet potato
cooked and cubed
3 cupsblack beans
soaked and ready to go
2 cupsvegetable broth
1can diced tomato
1 tblspfresh lime juice
1 tblspchilli powder
1 tspcocoa powder
1 tspground cumin
1 tspsalt
½ tspcinnamon
½ tspcayenne pepper
dried oregano
Instructions
Step 1
In a large soup pot over medium heat warm avocado oil
Step 2
add onion, garlic and saute for 2 minutes
Step 3
stir in the peppers and cook until soft
Step 4
Add sweet potatos, beans, broth, tomatoes, lime juice, and all the podered herbs, chilli powder, cumin salt cinnamon, cayenne pepper, oregano. Stir to combine and cook for 15 mins. serve immediately
