Grain-free, low-sugar cookies. You can also eat them raw - leave the dough in the fridge for 2 hours for “healthy” cookie dough.

Instructions

Step 1
Preheat oven to 400 F
Step 2
Mix together dry ingredients, then stir in rest, adding chocolate last. Should have moist, thick dough that holds it shape. Shape dough into cookies or balls and place on lined baking sheet.
Step 3
Bake for 9-12 minutes (9 for soft, 12 for crunchier, crumblier). Let cool for 5 minutes & enjoy
Step 4
Will keep in fridge for 2-3 days.
