Instructions

Step 1
Prepare two pots, one medium and one large.

In a medium pot, bring the broth and water to a boil. Once it reaches a bubbling boil, turn off the heat and cover the pot to keep it warm.

In the large pot, sauté the bacon with a tablespoon of water and brown sugar until it turns a golden, crispy texture.

In the meantime, chop all your veggies. Once the bacon is ready, add the onion, garlic, green onion, leak, celery, and split peas. Stir thoroughly and let the mixture sauté for about 4 to 5 minutes.

Pour in the entire broth and season with ¼ spoon of salt and pepper to taste. Cover the pot and allow it to come to a boil on medium-high heat. After reaching a boil, reduce the heat, add cilantro, and let the soup simmer for approximately 40 to 50 minutes, stirring occasionally. This will allow the soup to thicken, and the peas to break down.

If you desire a thicker consistency, you can extend the cooking time, adjusting the thickness to your liking. However, keep in mind that the soup will continue to thicken as it cools, so it's advisable not to over-thicken while cooking.
