Ingredients

3bananas
extra ripe, mashed
¾ cupbrown sugar
1egg
+ a yolk
1 tspvanilla extract
½ cupmilk
or alternative
2 cupsall purpose flour
½ cupquick rolled oats
1 tspbaking powder
½ tspsalt
½ tspcinnamon
¼ tspnutmeg
For the Cinnamon Sugar Topping
Instructions
Step 1
Preheat your oven to 375 degrees.
Step 2
In a large mixing bowl, combine all the dry ingredients; flour, baking powder, salt, cinnamon, and nutmeg.
Step 3
In a separate bowl, mash the bananas then add the sugar, eggs, vanilla, milk, and melted butter and whisk until smooth.
Step 4
Now add the smaller bowl of mixture to the large bowl of dry ingredients and mix until incorporated.
Step 5
Scoop equal amounts of the batter into a greased or paper lined 12 slot muffin pan.
Step 6
Top each muffin with the cinnamon sugar mixture prior to baking.
Step 7
Bake at 375 degrees for 18 minutes. Test with a knife to ensure they are baked through. Yields 12 muffins.
