Enhanced Creamy Gnocchi Soup

Inspired by @consciouschris on Instagram, part of his “Lazy Trader Joe’s Meals” series. I made some pretty serious modifications that I wouldn’t go without, hence the enhanced version! This recipe can easily be made vegan by using vegan cheese.

Ingredients
4 servings
olive oil
1 packageHoliday Vegetable Hash
1white beans
can, drained and rinsed but CONSERVE 2tbsp of liquid
2 cupsvegetable broth
or water
4 ozcream cheese
or other soft cheese, like Boursin
3 TbspNutritional yeast
or less
0.5 packagegnocchi
I used, mini rainbow gnocchi
1 blockTofu
or one half Pressed and cubed
garlic powder
Greek seasoning
oregano
sweet basil
ground thyme
onion powder
berbere
salt
black pepper
Instructions
Step 1
Sauté the holiday hash. I added garlic powder at this stage as well
Step 2
Transfer vegetables to blender
Step 3
Add beans, nutritional yeast, cheese, and broth to the blender. Add Greek seasoning- the original recipe called for herb Boursin. Optional: add a generous gloop of the bean liquid as well
Step 4
Blend until smooth. Add more liquid as needed
Step 5
Transfer blended mixture to pot on stove and heat on medium. Add the rest of the herbs to taste
Step 6
Add the pressed and cubed tofu. I used what I had, which was about 2/3 of a block. Just add as much as you want
Step 7
Add the gnocchi. It’s ready when they bob to the top, ~4 min
Step 8
Serve with toasted pepitas, croutons, coconut milk, fresh herbs, or any other garnish
