Instructions

Step 1
To a high speed blender, add 710ml (3 cups) dairy-free milk, coconut milk, maple syrup, cinnamon, ground nutmeg, vanilla extract, and cardamom if using.
Step 2
Blend on high until creamy and smooth - 1-2 minutes.
Step 3
Taste and adjust flavour as needed, adding more spices for warmth or more maple syrup for sweetness.
Step 4
For serving, enjoy cold, over ice, or hot by heating over a medium heat until warm. Optionally, you can add 0.5-1 ounce of bourbon per cup serving. Serve as is or with coconut whipped cream and a pinch more cinnamon or nutmeg.
Step 5
Transfer remaining eggnog to a jar for storing. Leftovers should keep in the fridge for up to 4-5 days. Or freeze into ice cubes and store for up to one month. Shake well before serving - a little separation is natural.
