Instructions

Step 1
Set the Instant Pot to the "Saute" setting.

Add the olive oil to the pot and heat for 30 seconds.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 30 seconds more, until fragrant.

Add the chicken to the pot and cook until browned on all sides, about 5 minutes.

Stir in the carrot, celery, diced tomatoes, chicken broth, salt, pepper, oregano, and thyme.

Close the lid of the Instant Pot and set the valve to "Sealing."

Cook on the "Manual" setting for 8 minutes.

When the cooking time is complete, let the pressure release naturally for 10 minutes.
