Chicharrones
2 stripsPork belly
.5 inch thick
6bay leaves
salt
8peppercorns
5 clovesgarlic
peeled
1white onion
quartered
water

Instructions
Chicharrones
Step 1
Start by adding all ingredients to a pot and fill with water until covered.
Step 2
Turn heat to high and bring water to a heavy boil, once boiling turn heat down to simmer, cover and leave for one hour.
Step 3
Drain your water and move pork belly to a rack, pat dry and leave in your fridge for 2-12 hours.
Step 4
Heat oil in a pan, enough to cover the pork.
Step 5
Remove your pork from the fridge and make sure it is completely dry. Add into the oil and fry until both sides are golden brown and crispy.
Step 6
Remove pork from your pan and place on a paper towel lined plate to absorb any extra oil.
Guacamole
Step 7
Mash your avocado down to your desired texture and stir in all other ingredients, adding salt to taste.
Serve Warm
