Sunday roasts are become a staple in our household, nearly every week I find a new cut of meat to learn how to cook with and this time we got ourselves some beef chuck steaks to slow cook! You literally set and forget, and then and the end of the day you have the most amazing, hearty meal with pull apart meat and delicious roast vegetables. The heirloom carrots just give it that extra wholesome vibe plus they tend to have more flavour than regular carrots Cuts of meat like chuck steak are always cheaper than regular steak because they are basically only suitable for slow cooked recipes, so you can get some good quality grass fed beef at a fairly reasonable price! Instructions

Step 1
Preheat oven to 160C
Step 2
Sear the steaks on each side
Step 3
In an oven safe pot, spread the onion and celery then place the beef on top
Step 4
Add the carrots and then pour over the olive oil, salt and pepper, along with the rosemary, thyme and red wine
Step 5
Mix the flour into the hot stock and add that to the pot too, the flour will ensure you get a nice thick red wine gravy at the bottom of your pot
Step 6
Roast in the oven for 3 1/2 hours with the lid on and 30 minutes with the lid off
Step 7
When plating, serve with mashed potatoes and make sure you pour lots of the saucy gravy from

The pot all over your meat and carrots. Top with fresh parsley and enjoy
