Instructions
Step 1
Soften the tortillas by frying them in oil or microwave them for 20 seconds or so.
Step 2
Grate all the cheese
Step 3
Reserve about a cup or so of the cheese for the top.
Step 4
Mix all the salsa with the big bowl of cheese.
Step 5
Put a ton of the mix in the shells and roll them up in a pan.
Step 6
Pour the enchilada sauce over the top and sprinkle the top of that with the extra cheese.
Step 7
Bake at 350 degrees till the cheese is melted.
Step 8
You can add cut-up green onions if you like them or add anything else if you like it. I guess you could add chicken or beef if it will fit into those fat shells.
