Instructions
Step 1
Preheat oven to 350°F. Line a 8x8 baking pan with parchment paper, leaving overhang
Step 2
Grind the crackers down into a powder. Pour in butter and salt and mix well.
Step 3
Press into the pan to make an even crust and bake it for 10 minutes. Take out and let it cool.
Step 4
While the crust is baking/cooling, make the crumble topping. Combine the flour, sugar, oats, cinnamon, salt and melted butter in a bowl and set it aside.
Step 5
To make the cheesecake; In a large bowl, beat the cream cheese and sugar together until smooth.
Step 6
Add in the sour cream, lemon juice, salt and vanilla extract. Beat until fully combined.
Step 7
Crack in and mix the eggs in one at a time. Add in the next one just when the last one starts to mix in the batter. Don’t mix too much with the electric mixer because it will incorporate too much air, leading to your cheesecake cracking at the end.
Step 8
Once all the eggs are in, mix gently and thoroughly with a spatula. Do not mix it too much. Set it aside while you prepare the apple topping
Step 9
To make the apple topping, dice and then toss the apples in a medium sized bowl with lemon juice to prevent browning. Add in the brown sugar, cinnamon, nutmeg, ginger and salt. Mix with a spoon until all apples are coated.
Step 10
Take a few spoons of the juice the apples have released and mix it into the cheesecake batter.
Step 11
Pour the cheesecake batter in the pan and even it out. Evenly top with the apple mixture and the crumble mixture.
Step 12
Place in oven and bake for 40-50 minutes or until the sides are set and the middle is slightly jiggly. Once it's done, turn off the oven and slightly prop open the oven door with a wooden spoon for about an hour so it slowly cools down. Take it out of the oven and and let it come to room temp before refridgerating for at least 4 hours.

When ready to serve, take out of fridge and cut into 9 pieces. generously drizzle with caramel sauce and enjoy!
