Instructions

Step 1
Prepare a metal bowl in an ice bath. Add the cream to the bowl. Combine cinnamon, bay leaves, and milk in a sauce pan. Begin heating over medium heat, stirring occasionally. While the milk mixture is heating, beat the sugar into the eggs until thickened and pale yellow. Beat in the cornstarch. When milk comes to a simmer, turn off the heat, cover, and let steep for 10 minutes. Remove bay leaves. Slowing whisk the milk mixture into the egg mixture, then return entire mixture to the saucepan. Place over medium heat, stirring constantly, heating to 170ºF. Immediately pour the warm mixture through a strainer into the metal bowl set on ice. Allow to cool, then chill mixture overnight in the fridge.
