Pumpkin Bharta gut friendly
I was looking for some good recipes to use a pumpkin and the last few times I wasn’t happy with the results.
This time though, I enjoyed the recipe and wanted to save it for the future.

Instructions
Step 1
Heat ghee and roast pumpkin until it’s fully cooked but not mushy. About 7 min
Step 2
Separately, roast cumin and add tomatoes and cook until oil separates
Step 3
Add amchur and cumin powder
Step 4
Add roasted pumpkin, salt and stir well
Step 5
Stir in some coconut milk optionally
Step 6
Let cook for a couple min and serve
