Instructions

Step 1
1. Roast tomatillos, poblano pepper, serranos, onion, and garlic using your preferred method (air fry at 390° F for 10 minutes)
Step 2
2. Let the poblano pepper sit in the air fryer for 10-15 minutes, peel, and remove seeds and skin.
Step 3
3. Add roasted vegetables to a blender with seasonings and 1/2 cup water.
Step 4
4. Add salsa to a pan and simmer for 10 minutes. (Remove excess salsa from blender with 1/2 cup water)
Step 5
5. Cut the tortillas into triangles. Add oil spray and air fry for 4 minutes at 360° F. Shake and air fry for additional 3-4 minutes.
Step 6
6. Mix egg whites and egg. Add salt and pepper to taste.
Step 7
7. Cook in a greased pan and put to the side.
Step 8
8. Add the 3 tbsp onions to the pan and cook 1-2 minutes.
Step 9
9. Add the tortilla chips and salsa. Mix well.
Step 10
10. Top with cheese.
Step 11
11. Serve the eggs with the chilaquiles. Top with Greek yogurt, fat free cheese, more onion, and cilantro.
