Nduja Steak Sandwich with Caramelised Red Onions

Instructions
Step 1
Allow the steaks to reach room temperature uncovered remove any fat, and season both sides with salt and pepper, then set aside.
Step 2
Add 1.5 tablespoons of oil to a pan along with the red wine vinegar and heat.
Step 3
Add in the slices of red onion and mix well with the oil and vinegar. Keep stirring the onions until they are caramelised, remove them from the pan into bowl.
Step 4
Wipe down the pan with kitchen paper ensuring to remove any remaining bits of onion to stop them from making the steak bitter.
Step 5
Return the pan to the heat and add in a little more oil.
Step 6
Add the steak into the hot pan and leave to cook for 4/5 minutes before turning them over and cooking the other sides.
Step 7
Add in the butter, smash the garlic and add those into the pan, once the butter has melted begin basting the steak, baste for 2/3 minutes then remove from the pan and allow to rest in a bowl.
Step 8
Add the nduja paste into the pan with the melted butter and stir until the paste and butter have combined into a sauce. Turn off the heat.

Finely slice the steaks

And add into the pan with the hot sauce along with the resting juices and stir to coat the steak slices.

Time to build.

Slice the sub rolls in half.
Step 13
Add a layer of spinach leaves to the bottom of the roll, followed by a layer of tomato slices.
Step 14
Next, add a layer of the steak on top of the tomatoes, and top the steak with caramelised onions.
Step 15
Place the top of the roll on top.
Step 16
Lick your lips and enjoy.
