Air Fryer Chicken Jerky

Chicken jerky is a great high protein snack, and it's way cheaper than buying beef jerky at the store (or use this to make beef jerky too). It's simple to do, just requiring an overnight marinate of thinly sliced chicken breasts, and a few hours of dehydrating. They're spicy, sweet, salty, healthy, and delicious.

Step 1
Thinly slice the chicken, about 1/4 inch thick. Using slightly frozen chicken will make it easier to slice. Mix with the marinade, and let sit in the fridge overnight (covered if in a bowl, or seal the bag)
boneless skinless chicken breast0.5 lb
low sodium soy sauce30g
gochujang16g
lemon juice15g
paprika1 tsp
black pepper1 tsp
garlic powder1 tsp
chili powder1 tsp
Step 2
Remove the excess marinade and add to a parchment lined basket. Air fry at 370F for about 9-10 minutes, or until the chicken just reaches 165F. This is to ensure safety and that all salmonella is cooked off prior to dehydrating.
Step 3
Switch your air fryer to dehydrate mode at 170F. Cook for an additional 3 hours (flipping halfway), or until you have your desired texture. Store in an air tight container in the fridge
