Ingredients

Jeweled Rice:
½ cupwhite onion
1 clovegarlic
½ cupapples
½ cupbutternut squash
2 tspcinnamon
1 tspground ginger
½ tspsalt
⅛ cuporange juice
½ cupvegetable stock
¼ cupbrown rice
rinsed
1 Tbspraisins
0.5 tbspswalnuts
½ Tbspmint

Instructions
Step 1
Start by marinading the cod. Mix all the ingredients in a bowl and cover the cod completely. Set aside
Step 2
Heat a drizzle of olive oil over medium high heat in a large, deep pan. Add in your onion and sauté for 3-4 min. Then add in your garlic and sauté for 1 more minute
Step 3
Reduce heat to medium. Add apples and butternut squash and mix. Let it cook for 3 more minutes. Then add the seasonings and let it toast for 1 more minute
Step 4
Add in the orange juice and vegetable stock. Turn the heat to high until it boils. Add rinsed brown rice. Lower heat to a simmer and cover. Let cook for 40 min
Step 5
With 10 minutes to spare, start preparing your cod. In a small pan over medium high heat, cook your cod for 4 minutes on each side, or until fully cooked
Step 6
Once the rice is ready, remove the lid and add in mint, walnuts, and raisins. Mix together
Step 7
Serve rice with cod and enjoy!
