Best Barbacoa for Tacos

This turned out so amazing and this is just the way I did it. I serve this with corn tortillas, cilantro, lime, onion and dip the tacos in the broth. So good. I order my chili powders from amazon.

Instructions

Step 1
Note: This can be slow cooked in a crock pot on low for 8 hours. Cut roast into 3 inch squares first if cooking in crock pot. Otherwise move to step 2.
Step 2
Sear roast in oil on all sides while generously salting and peppering. Add some smoked paprika too.
Step 3
Cut 1 onion and put on bottom of instant pot.
Step 4
Deglaze pan with a little cabernet sovingoin. Add 1 tsp beef bullion.
Step 5
Place roast on top of onions. Sprinkle with garlic, morita chili powder, guajillo chili powder, oregano and a pinch of powdered clove.
Step 6
Pour liquid over roast and set on slow cook for 5 or 6 hours.
Step 7
If still tough.after 5 or 6 hours, pressure cook for 10 minutes. Then place in oven in a Dutch oven pot at 300 for 1.5 hours or till falling apart.
