Instructions

Step 1
1. Cook pasta according to the package. Reserve 1/2 cup of pasta water.
Step 2
2. Remove the stems of the red bell peppers.
Step 3
3. Roast the bell peppers, onion, garlic cloves, and tomato using your preferred method. I air fry at 375° F for 10 minutes.
Step 4
4. Place in a bag (or leave in air fryer) for 10-15 minutes before peeling the skin of the bell peppers.
Step 5
5. Add the peppers, garlic, onion, tomato, Greek yogurt, laughing cow wedges, onion, chicken bouillon, and seasonings of choice to the blender. Blend until smooth.
Step 6
6. Add 2 tbsp of light margarine to a pan and melt.
Step 7
7. Add crema roja and simmer on low heat for 10 minutes. Add pasta water if sauce is too thick.
Step 8
8. Add cooked pasta and mix well.
Step 9
9. Top with 1 c fat free mozzarella cheese.
Step 10
10. Divide into 4 equal servings - about 2 ounces of pasta or ~3/4 cup. Serve with 1/2 cup broccoli and 4 ounces of air fried thin slice chicken breast (400° F for 6-8 minutes)
