Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
In a medium bowl, whisk together powdered sugar free sweetener(I used powdered monk fruit) cocoa powder, and salt.
Step 3
Beat eggs with an electric mixer for 1 minute in a separate large bowl.
Step 4
Slowly, mix in dry ingredient mixture. Add vanilla extract and chocolate chips. (we suggest lily's brand chocolate chips and white chocolate peppermint chips) Mix until combined.
Step 5
Using a cookie scoop, scoop a 1/2 - 3/4 inch ball of cookie dough onto a parchment lined baking tray. Space cookies about 1 inch apart on the baking sheet. Flatten with the back of a greased spatula or spoon. Sprinkle with finishing salt. Bake at 350 degrees for 10 minutes. Let cool before handling. Finishing salt is optional.

Serving size is one cookie(take one and put them away, they are so good you will be tempted to eat more!)
Step 7
*Note* If you don't like peppermint, you could just use double the regular sugar free milk chocolate chips to make them without peppermint white chocolate.
