This recipe is a play on the classic children's Lunchable, but it is dressed up for adults. You can add veggies and different kinds of protein for a well balanced meal.

Instructions
Step 1
Weigh out the turkey slices and stack them (about 3-4 slices per serving).
Step 2
Add the dijon to the center of the stack of turkey slices and then spread in an even layer. Roll the slices up and then cut into rolls.
Step 3
Cut the tops of the mini peppers off, and then cut them in half lengthwise. Scoop the seeds out.
Step 4
Add an equal amount of the cheese wedge to the inside of each mini pepper and sprinkle with the everything bagel seasoning.
Step 5
Slice the cucumber.
Step 6
Portion out the hummus into a smaller container (I used a cupcake liner).
Step 7
Assemble each box: turkey rolls, stuffed peppers, cut cucumber, baby carrots, hummus.
