Ingredients

1 cupgluten-free all-purpose flour blend
like 's Red Mill or King Arthur
¼ cupalmond flour
¼ cupunsweetened cocoa powder
½ teaspoonbaking soda
¼ teaspoonsalt
¼ cupcoconut oil
melted and cooled slightly
¼ cupbrown sugar
¼ cupmaple syrup
1 tablespoonflaxseed meal
mixed with 3 tablespoons water, flax "egg")
½ teaspoonvanilla extract
½ cupdairy-free chocolate chips
milk or dark, according to your preference
Instructions
Step 1
Preheat and prep: Preheat your oven to 375°F and line a baking sheet with parchment paper.

Dry mix: In a medium bowl, whisk together the gluten-free flour blend, almond flour, cocoa powder, baking soda, and salt.

Wet mix: In a separate bowl, whisk together the melted coconut oil, brown sugar, maple syrup, flax "egg", and vanilla extract until smooth.

Combine and fold: Pour the wet ingredients into the dry ingredients and fold gently until just combined. Don't overmix!

Chocolate chip magic: Fold in the dairy-free chocolate chips.

Scoop and bake: Drop heaping tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between them.

Go bake! Bake the cookies for 15 minutes, or until the edges are golden brown and the centers are slightly soft.
