Step 1
In a bowl, combine the diced tomatoes, chopped basil, onion, minced garlic, and olive oil. Make sure not to break up the tomatoes too much. Season with salt and pepper to taste. Seal the bowl with a lid or wrap and refrigerate for a minimum of one hour to let the flavours meld and intensify.
Step 2
Slice the Italian bread and lightly toast it until it's light brown on both sides.
If you want to go the easy route - heat oven to 400°F. Place bread slices in a single layer on a baking sheet. Optionally, brush with olive oil for extra flavor. Bake for 7-10 minutes until golden and crisp, then transfer to a wire rack to cool.
