Instructions
Step 1
Chop the potatoes into 2cm chunks and boil for 17 mins
Step 2
While potatoes are cooking, sauté the chicken 5 mins until brown, add Cajun spice and cook 1 minute more
Step 3
Stir in passata, chicken stock gel, and sugar bring to the boil then simmer 3-4 mins
Step 4
Stir through the crème fraiche and Parmesan and season with salt and pepper
Step 5
Add the spinach one handful at a time until wilted
Step 6
Mash the potatoes with a knob of butter and a splash of milk, salt and pepper and plate up the potatoes and chicken
