Step 1
In a small saucepan, combine the rinsed quinoa with 1 cup water.

Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until fluffed and cooked through. Set aside to cool slightly.

Wash and chop the greens and slice the bell pepper.
Step 4
Divide the cooked quinoa, chopped greens, sliced bell pepper, crumbled chicken/lentils, and cherry tomato halves into a bowl, creating a colorful arrangement.

Drizzle the vinaigrette dressing over the bowl, adjusting the amount to your liking. (or you can save this for lunchtime)

Store the entire bowl in an airtight container or wrap it tightly with plastic wrap.
