Instructions
Step 1
Saute onions and garlic in olive oil until transparent
Step 2
Finely chopped sage and add to pan for 1 minute with onions and garlic
Step 3
Cut sweet potatoes into cubes and add to pan. Add a dash more olive oil
Step 4
Cover with lid and cook until tender
Step 5
Remove lid and allow to continue cooking for another 3 minutes to Brown the edges of the sweet potatoe
Step 6
Wants to desired consistency sprinkle in pumpkin seed cook for three more minutes
Step 7
Add parmesan cover and cook for another minute
Step 8
Finish and add tomatoes to the top. Lay layer over spring mix into bottom of bowl. Abd sweet potatoe mix ontop. Serve hot
Step 9
If desired add sour cream or plain yogurt
