Instructions
Step 1
Preheat oven 300º for 10 minutes.
Step 2
Cream butter or margarine until light. Gradually beat in sugar, vanilla, and eggs, one at a time.
Step 3
Add salt, baking powder, mace and ginger, mixing well.
Step 4
Add unsifted flour alternately with the brandy, beginning and ending with the flour. Mix until a silky batter is achieved.
Step 5
With rubber spatula combine batter with raisins, candied fruit mix and walnuts, mixing well.
Step 6
Transfer to well-greased tube pan (8 cups) and bake in slow 300º oven for 1 1/2 hours or until cake starts to leave sides of pan and tests done when a tester or wooden pick comes away clean.
Step 7
Allow cake to stand in pan 15 minutes. Loosen edge with small spatula, shake cake loose and turn out on rack to complete cooling. Wrap cooled cake in foil to store. If desired, cake may be glazed when is to be preserved.
Step 8
Mix 1/2 cup sifted confectioners sugar with one tablespoon brandy. Drizzle then frosting over top. Decorate with candied cherries or cut mixed fruit.
