Step 1
Pre-heat oven to 425 degrees.
Halve, peal and thinly slice onion.
Mince a few slices until you have about 2 tbsp.

In a large bowl, combine beef, panko, garlic powder, stock concentrate, minced onion, ketchup, salt and pepper.
Form beef mix into two 1 inch tall loaves. Place on baking sheet. Brush tops with a small amount of ketchup.
Roast on middle rack until cooked, 15-20 minutes.

Step 3
While meatloaf cooks, heat a drizzle of oil in a large pan/skillet over medium-high heat. Add sliced onion and cook, stirring occasionally, until browned and softened, 8-10 minutes.
Add 1 tsp sugar and a splash of water. Cook, adding more water as necessary until onion is caramelized and jammy, 2-3 minutes. Season with salt and pepper.
Turn off heat and transfer onion to small bowl.

Step 4
Toast bread until golden brown.
While broad toasts, combine horseradish sauce, mayonnaise, and half the mustard.

Step 5
Lay toasted bread out on a cutting board. Spread half the bread slices with caramelized onion; spread remaining bread slices with sauce. Cut each meatloaf crosswise into four slices, fan out slices over bread topped with caramelized onion. Close sandwiches and cut in half.
