Sticky Red Wine Glazed Tofu Fillet

Instructions
Step 1
1. Place the stock in a sauce pan and bring to a boil.

2. Once boiling, add the block of tofu.
Step 3
3. Boil for 3 minutes, if the stock doesn't fully cover the tofu, flip over half way.
Step 4
4. Drain the tofu, reserving half of the stock. Leave to cool before slicing.
Step 5
5. Place all the marinade ingredients into a tupperware container and whisk until combined.
Step 6
6. Make diamond criss cross patterns with a knife about half way through the block of tofu, so that the marinade can penetrate better.
Step 7
7. Place the scored block into the marinade (ensure it fully covers the tofu, place a lid on and leave in the fridge overnight (or up to 2 days).

8. When ready to bake, preheat your oven to 200c (fan).
Step 9
9. Drain the tofu and place into a small baking dish, pour the marinade into a pan on a low heat. Leave the marinade to reduce for 15-20 minutes, stirring occasionally.
Step 10
10. Bake the tofu for 45 minutes, removing from the oven at 15 minute intervals to baste with the red wine jus.
Step 11
11. Serve with extra jus and enjoy!
