Peel the onion and cut into very thin slices.

In one small bowl mix lemon juice and olive oil, season with a pinch of salt. Then add the the onion and stir.

Cut the herring fillets into small strips, put together on a plate. Then put onion on herring pieces and serve with dark rye bread or boiled or fried potatoes.

>> I’ve used olive pomace oil, but you can also use sunflower, canola or any other favorite oil.
