Step 1
Heat oil in a large sauce pan over medium heat and add rice, stir so the rice is well coated with oil. Cook, while stirring constantly, until rice is browned. Towards the end of browning add your onions and garlic. Don't add onions too soon or the rice will be soft and mushy later. Also add your salt, cumin and other seasoning at this time. Now stir in the chicken broth and tomato sauce, bring to a boil. Stir again and reduce heat to low, cover abd simmer for 20-25 minutes or until broth is absorbed Gently fluff with fork and serve.
