Three Bean Slow Cooker Chili

Everyone has a favorite chili recipe. I've been tweaking mine for over a decade and I think I finally found the taste I was looking for. This version uses canned beans but it can also be made with dried beans. If using dried beans, you'll want roughly 1 cup of each type of bean and allow them to soak overnight.

Ingredients

1 Tbspolive oil
½ cuponion
chopped
1 Tbspgarlic
minced
1 lbground venison
15 ozcan of black beans
15 ozcan red kidney beans
15 ozcan pinto beans
4 ozcan green chilis
28 ozcan diced tomatoes
Chili Seasoning
Instructions
Step 1
Heat oil in a large skillet and saute onions until they begin to sweat. Add the garlic and continue cooking for another minute or so.
Step 2
Add the ground beef to the skillet breaking it up as it browns. The meat should mix with the onions and garlic as it cooks.
Step 3
Pour tomatoes, beans (drained), chilis, and seasoning mix into a 3-quart slow cooker. Pour the ground beef mixture on top and give it a couple of of stirs with a wooden spoon.
Step 4
Cook on low for 6+ hours or on high 3-4 hours. Stir occasionally to mix thoroughly as it cooks.
