High protein Apple Waffles - Gluten free

Makes about 11 waffles each about 70g.
2 waffles provide 12g of protein and 10g fiber, and 25% of daily RDA for magnesium.
Or leave out the egg for a vegan version with only 2g less protein. This also makes the waffles lighter and crisper.

Ingredients

40graw almonds
100gdried chickpeas
55gdried mung beans
120gsteel cut oats
1egg
300mlwater
3 tablespoonextra virgin olive oil
2 tablespoonscider vinegar
100gsweet potato
microwaved, peeled and rough diced
250gApple
1 cm dice, microwaved
35gcorn starch
2 tablespoonspsyllium husk
1 ½ teaspoonbaking soda
1 teaspoonbaking powder

Instructions
Step 1
Soak the almonds, chickpeas, mung beans and steel cut oats together, overnight.
Step 2
Microwave, peel and rough dice the sweet potato.
Step 3
Dice and microwave the apple.
Step 4
Add the soaked ingredients, 300ml water, eggs, oil and vinegar to a high power blender, and blend until smooth.
Step 5
Add the sweet potato and blend until combined. Add a little water if needed. Pour into a bowl.
Step 6
Combine leavening, psyllium husk and a little water and mix quickly into the batter with a balloon whisk, until it rises. Then and the cooked diced apples and mix only until combined. Don't mix too long or the batter will deflate. 15-30 seconds
Step 7
Allow to sit and thicken for 15 minutes.
Step 8
Cook to desired color. In our waffle iron each batch takes about 8 minutes to cook. Considerably longer than wheat waffles.
Step 9
Take from the waffle iron and place on a wire rack. If the waffles are heavy and wet, the leavening may be old, or the batter may have been over mixed and collapsed. We find these waffles freeze and refrigerated well and can be toasted before serving.
