Step 1
Melt butter in a pan and stir in crushed biscuits. Line a 20cm cake tin with clingfilm, spoon in the biscuit mix and press flat, then refrigerate.
Mix together cheese, caster sugar and vanilla essence, whip the cream until stiff, then fold into the cheese mixture.
Spread onto the biscuit base and refrigerate for 2 hours
