Instructions
Step 1
In a small saucepan, melt 2 tbsp of the butter over medium-low heat. Whisk in the flour until smooth.

Let bubble without browning, whisking frequently, for 1 minute. Gradually whisk in the warm milk, raise the heat to medium, and bring to a gentle boil, whisking frequently. Reduce the heat to medium-low and simmer, whisking frequently, until thickened, about 5 minutes. Remove from the heat. Stir in ¾ cup (90 g) of the cheese and 1 tsp of the mustard. Season to taste with salt and pepper. Transfer to a bowl, cover with a piece of plastic wrap pressed directly onto the surface of the sauce, and let cool.
Step 3
Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
Step 4
Arrange the bread slices in a single layer on the prepared baking sheet. Bake, turning once, until toasted on both sides, about 10 minutes. Set aside.
Step 5
In a large frying pan, melt the remaining 2 tbsp butter over medium heat. Crack the eggs into the pan. Season with salt and pepper, cover, reduce the heat to medium-low, and cook until the whites are set and the yolks thicken, 2-3 minutes for sunny-side-up eggs. Or carefully flip the eggs and cook to the desired doneness.
Step 6
Preheat the broiler.
Step 7
Spread 4 bread slices with the remaining 4 tsp mustard, then add an equal amount of the sliced ham and 1 tbsp of the sauce to each slice. Cover with the remaining bread slices. Return the sandwiches to the baking sheet. Spread the remaining sauce over the tops of the sandwiches and sprinkle each with 1 tbsp of the remaining cheese. Broil until the cheese is melted and golden, about 2 minutes. Transfer to individual plates, top each with a fried egg, and serve.
