Instructions
Step 1
In a large pot, combine garlic and onion with 1-2 tablespoons of water, and saute until softened (abt 3 min)
Step 2
Add carrot, celery, potato, dried oregano, salt, and pepper. Sauté until potato and carrot have softened (abt 6 min)
Step 3
Add vegetable broth, diced tomatoes, chickpeas and pasta. Bring to a boil, then simmer for 12-15 min, until pasta is cooked. Garnish with fresh parsley
