Copycat Chocolate RX Bars
7 steps
Prep:15min
RX Bars are one of the prepackaged snacks that I will occasionally buy, as they're pretty healthy with their protein powder and lack of ultra processed ingredients. They are quite pricey though, so I prefer to make them myself. They're dead simple, and way cheaper than what you can get at the store.

Instructions
Step 1
Prepare an 8" square baking dish by lining it with parchment paper. If your dates are very dry, soak them in hot water for about 10 minutes to soften. Otherwise, skip this step. Set aside the soaking water for later

Step 2
In a food processor, chop the nuts until finely ground. Any nuts will work here. I've gone with almonds and peanuts, but other good choices are pistachios, cashew, pumpkin seeds, or sunflower seeds
almonds½ cup
peanuts½ cup
Step 3
Blend in the cocoa and protein powder for about 30 seconds, or until fully incorporated. You could also use powdered peanut butter in place of cocoa powder for a peanut butter flavored bar instead of chocolate

Step 4
Finally, blend in the dates. Season with salt to taste (depending on the saltiness of your nuts). You should have a sticky but workable dough. Add a little of the soaking water if needed
salt½ tsp
Step 5
Transfer dough to the pan and flatten into a square. Pack it down, and make sure it's even thickness
Step 6
Chill in the fridge for a few hours before slicing
Step 7
Store in the fridge or freezer between pieces of parchment paper so they don't stick together
