Oven Roasted Pork Tenderloin

Pork:
pork tenderloins
3/4 pounds - 1 1/4 pound each
3 tablespoonsbrown sugar
1 ½ tablespoonspaprika
1 ½ teaspoonsalt
1 ½ teaspoonground mustard
1 teaspoonblack pepper
1 teaspoononion powder
½ teaspoongarlic powder
1 tablespoonsolive oil
Green Beans:
1 ½ tablespoonsolive oil
0.75 poundfresh green beans
trimmed
½ teaspoononion salt
½ teaspoongarlic salt
½ teaspoongarlic powder
freshly ground pepper

Potatoes:

Step 1
Pork:

Preheat oven to 425°F.
Step 3
Mix all dry ingredients in a small bowl.
Step 4
Trim pork tenderloin of any excess fat or silverskin. Pat pork dry and coat with olive oil.
Step 5
Rub seasoning mix all over pork tenderloin.
Step 6
Place seasoned pork into a shallow baking dish and bake in oven 25-30 minutes (internal temp should be at least 145°F)

Remove from oven and place pork tenderloin on a plate and let rest at least 5 minutes before slicing.

Green Beans:

Heat olive oil in a skillet over medium heat.
Step 10
Add green beans, onion salt, garlic salt, garlic powder, and black pepper to skillet.

Cook and stir until desired tenderness is reached, 5 to 10 minutes.

Potatoes:

Bring a medium-sized pot of lightly salted water to a boil.
Step 15
Cut each potato into chunks (small potatoes in half, medium potatoes into 4 chunks and very large ones into 6). Skip this step if you're using baby potatoes.

Place the potatoes into the boiling water and cook for 5-7 minutes, until they're just tender.

Heat the oven to 200°C, 180°C fan, gas 7, and place a baking tray or a baking dish inside to heat up for a couple of minutes.
Step 18
Drain the potatoes and transfer them into the hot baking dish. Season with extra-virgin olive oil, garlic, rosemary, sea salt and black pepper, and spread out the potatoes in a nice even layer.
Step 19
Transfer the potatoes into the oven and bake for 10-15 minutes, until crispy and golden. Halfway through cooking time, remove the pan from the oven, and flip the potatoes on the other side.

Remove the baking tray from the oven, sprinkle the potatoes with extra sea salt and pepper if you like, and let them rest for 5 more minutes before serving.
