Zucchini Fritters (Also called Mücver, a Turkish Recipe)

A delicious Turkish dish that makes a good side for any meal. Serve with a cool dill/yogurt dipping sauce or a red pepper sauce. My preferred red pepper sauce is a combination of pepper paste, butter, garlic, parsley, and pomegranate syrup.

1. Put grated zucchini in a colander and sprinkle with salt. 2. Crack the eggs into a bowl and add the parsley, dill, mint, and spices. 3. Take a paper towel and press down on the zucchini in your colander. Try to press out as much of the liquid as possible. 4. Add the zucchini to your mixing bowl and mix everything together well. 5. Stir in the flour. It should look like a thick paste. 6. Heat oil in a frying pan to medium high heat. There should be approximately half an inch of oil. 7. Drop spoonfuls of your zucchini batter into the hot oil and fry for about 4 minutes per side. The fritters should be a dark golden brown color when finished. 8. Transfer in batches to an oven warmed to 200F to keep them warm while you finish frying all of them or making other food.
