Instructions

Step 1
Break up all of your chocolate bars into thick pieces
Step 2
Pour a little less than half of your heavy cream into a large bowl
Step 3
allow the cream to warm up in 25 second increments in the microwave
Step 4
add the chocolate pieces into the warm cream, and fold the chocolate until it is melted
Step 5
add more cream if necessary, depending on your desired density
Step 6
allow the combined ingredients to sit in the bowl at room temperature for 15 minutes before transferring to the fridge
Step 7
place a piece of plastic wrap directly over the chocolate and store the truffle mix in the fridge for 1-2 hours
Step 8
once you can press into the mixture and leave a shallow fingerprint, thats usually when it is dense enough to roll into balls without melting
Step 9
scoop about 2 tbsp out of the bowl and shape carefully between your fingertips
Step 10
they can be stored in the fridge for up to 3 days ( before they become too solid) or at room temperature for 1 day (before they develop a crust)
