Love salmon but looking for a new recipe? Try stuffing it with cream cheese and pesto, and adding a crispy panko crust. So delicious and very easy to do. Recipe details below:
INGREDIENTS
4 salmon fillets
4 oz light cream cheese softened
3 tbsp pesto
1/3 cup panko crumbs
1 tbsp olive oil
Salt
INSTRUCTIONS
1. Preheat oven to 400 F, line a baking sheet with parchment paper.
2. Make a horizontal slit in salmon to make a pocket not cutting all the way through.
3. Mix softened cream cheese and pesto and stuff into pocket.
4. Mix panko, olive oil and salt and sprinkle over top salmon.
5. Bake just until cooked to your preference approx. 10 – 15 minutes. Enjoy!
