Instructions
Chicken
Step 1
Cut the chicken into cubes.
Step 2
Heat the oil in the pan. Leave the heat on medium high and add the chicken. Fry for about 2min.
Step 3
Add the seasoning and fry for another 3min.
Vegetables
Step 4
Dice the eggplant and tomatoes and mince the garlic and basil.
Step 5
Heat the oil in the pan. Leave the heat on medium high. Add the eggplant and fry for about 3min. You may have to add more olive oil.
Step 6
Add the cherry tomatoes, garlic and seasoning. Fry for another 2min.
Step 7
Add the chicken and fry for one more minute.
Sandwich
Step 8
Slice the mozzarella.
Step 9
Cut the baguette in half. Spread the bottom half with the basil mayonnaise.
Step 10
Top the bottom half with the chicken and vegetables.
Step 11
Place the mozzarella slices on top.
Step 12
Bake the baguette half in the oven at 180 degrees grill station for about 2min until the cheese has melted.
Step 13
Stack the other baguette half on top and enjoy!
