Ingredients

1 Tbspavocado oil
2 tablespoonsunsalted butter
1yellow onion

¼ cupsun-dried tomatoes
½ teaspoondried oregano
½ teaspoondried basil
½ teaspoondried dill
¼ teaspoonred pepper flakes
¼ cupall-purpose flour
2 cupschicken broth
1 cupheavy cream
¼ cupgrated parmesan cheese

1 bagfresh tortellini
1 cupspinach
chopped
½ cupcherry tomatoes
halved
2 tablespoonsparsley
chopped
Instructions
Step 1
Heat 1 tbsp of avocado oil in a medium-sized pan and 2 tablespoons of unsalted butter over low-medium heat until the butter is melted.
Step 2
Add the diced yellow onion to the pan and cook until golden, which should take about 2 to 3 minutes.
Step 3
Once the onions are golden, add the minced garlic and sun-dried tomatoes. Mix well and let them cook together for an additional 2 minutes.
Step 4
Season the mixture with ½ teaspoon each of dry oregano, basil, and dill. If you prefer, you can use an Italian seasoning blend. Also, add ¼ teaspoon of red pepper flakes for a bit of heat.
Step 5
Sprinkle ¼ cup of all-purpose flour over the mixture and stir to combine. Gradually pour in the 2 cups of chicken broth while continuing to stir. Ensure the broth is fully mixed in and repeat the process until all the broth is used. This should result in a smooth sauce.
Step 6
Let the sauce simmer over medium-low heat for approximately 8 minutes.
Step 7
Add 1 cup of heavy cream and ¼ cup of grated Parmesan cheese to the sauce.
Step 8
Season with salt and pepper to taste. Stir until the sauce is creamy and well combined.
Step 9
Once the sauce is ready, add the fresh tortellini pasta to the pan. Cover with a lid and cook for exactly 4 minutes. Fresh tortellini cooks quickly, so be cautious not to overcook.
Step 10
Turn off the heat and gently stir in the chopped spinach and halved cherry tomatoes.
Step 11
