Roasted Tomato & Basil Soup with Grilled Cheese

Instructions
Step 1
Place the tomatoes in a baking tray, along with the bulb of garlic sliced in half.
Step 2
Cover generously with olive oil and season with salt and pepper.
Step 3
Roast in the oven at 200c/390f for 35 - 40 minutes.
Step 4
Remove the stalks and squeeze the garlic out of their skins.
Step 5
Place in a pot on a medium-high heat and add the basil along vegetable stock.
Step 6
Simmer for 5 - 10 minutes and then blend.
Step 7
Add the cream, stir well and season to taste.
Step 8
Butter the outside of both slices of bread. Add the grated cheese.
Step 9
Melt butter in a frying pan on a medium heat and add the sandwich. Cook slowly on both sides until golden brown and the cheese has melted.
Step 10
Serve and enjoy!
