Tofu gyros
Tofu Gyros🤤🌿 my face at the end says it all! Save this recipe and give it a try.
I usually make this recipe as a gyros bowl but in the pita is perfection 🤌🏼 If you want an even higher protein option, try it with seitan!
Serves: 3-4
Tofu:
300g firm tofu, pressed to remove water
4 garlic cloves, minced
1.5 tbsp olive oil
1 tbsp oregano
2 tbsp lemon juice
1 tsp salt
1/2 tsp garlic powder
(Optional - add 1/4 cup vegan yogurt, I usually do when making it with cubed tofu or seitan)
Coconut tzatziki:
1/3 cup coconut yogurt
1 small cucumber, grated and water squeezed out
1 garlic clove, minced
1.5 tbsp fresh dill
1.5 tbsp lemon juice
1/2 tsp salt
Pinch of pepper
To serve:
Large pita bread
Lettuce, sliced
Cherry tomatoes, halved
Red onion, sliced
Vegan feta would be great too

Ingredients

300gfirm tofu
pressed to remove water

1 Tbsporegano
2 Tbsplemon juice
1 tspsalt
½ tspgarlic powder
⅓ cupcoconut yogurt
1cucumber
small, grated and water squeezed out
1garlic clove
minced
1 ½ Tbspfresh dill
1 ½ Tbsplemon juice
½ tspsalt
pepper
pita bread

Lettuce
sliced
cherry tomatoes

red onion
sliced
Instructions
Step 1
1. In a mixing bowl grate the tofu. Add in the oil, garlic, lemon, oregano, salt and combine.
Step 2
2. Add the tofu to a pan on high heat. Cook until golden (around 10-12 mins) and toss occasionally.
Step 3
3. In a bowl combine the yogurt, cucumber, lemon, garlic, dill, salt and pepper.
Step 4
4. Heat a pita in the microwave or on the stove until warm. Add lettuce, tofu, tomato, onion and tzatziki. Fold it up and enjoy.
