Ingredients

2 cupslong grain brown rice
organic, cooked
1 tablespooncanola oil
0.5 poundItalian sausage
ground, mild
0.5 poundextra lean ground turkey
1sweet onion
medium, diced
1red bell pepper
medium, diced
1green bell pepper
medium diced
4cloves garlic
minced
2 teaspoonsitalian seasoning
15 ouncelow sodium tomato sauce
14.5 ouncelow sodium diced tomatoes

3 cupslow sodium chicken broth
2 tablespoonsparsley

Instructions
Step 1
Cook rice according to directions
Step 2
Heat stock pot or Dutch oven over medium heat. Add ground sausage and turkey crumbling as it cooks. Drain excess fat and and set aside.
Step 3
Heat oil in the same stock pot or Dutch oven. Add onion, garlic, and peppers. Cook, stirring occasionally, until just tender, about 3-4 minutes. Add Italian seasoning and cook 1 minute.
Step 4
Stir in diced tomatoes, tomato sauce, chicken broth. Season with salt and pepper to taste. Bring to a boil; reduce heat and simmer to blend flavors for 15-20 minutes.
Step 5
Stir in rice and serve with fresh parley to top of each bowl.
